2017 Santa Cruz Mountains Cabernet Sauvignon
Aromas and flavors of candy bar milk chocolate, black licorice, stewed plum, and sassafras with a silky, prickly, bone-dry medium-full body and a warming, compelling, medium-long finish displaying impressions of milk chocolate covered cherries, fennel, baking spice with light oak flavor. A rich and decadent style of Cali Cabernet that will please many.
Our 2017 Cabernet Sauvignon is made with organically grown grapes from Cooper-Garrod Vineyards in Saratoga.
The early October harvest yielded balanced sugars and well-developed flavors. A six-day cold soak followed, at 40 degrees. We utilized a native fermentations, with a total maceration of 10 days.
This Cabernet was aged in French oak barrels for 27 months. It is unfiltered. Only 75 cases were produced.
